1 pound Italian sausage (spicy or mild, your choice)

2 large sweet potatoes, peeled and diced into 1-inch cubes

1 red bell pepper, chopped

1 yellow onion, sliced

3 cloves garlic, minced

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large bowl, toss together the diced sweet potatoes, red bell pepper, onion, and minced garlic with olive oil, smoked paprika, salt, and pepper. Make sure the veggies are well-coated.

      Spread on Baking Sheet: Spread the sweet potato mixture evenly on a large baking sheet lined with parchment paper. Bake in the preheated oven for 25 minutes.

        Cook the Sausage: While the sweet potatoes are baking, in a skillet over medium heat, cook the Italian sausage links until browned and cooked through (about 8-10 minutes). Once done, remove from the heat, slice into bite-sized pieces, and set aside.

          Make the Honey Garlic Sauce: In a small bowl, whisk together honey and soy sauce until well combined.

            Combine Ingredients: After 25 minutes of baking, remove the sweet potatoes from the oven. Add the cooked sausage pieces to the baking sheet and drizzle the honey garlic sauce over everything.

              Bake Again: Return the baking sheet to the oven and bake for an additional 10-15 minutes, until the sweet potatoes are tender and caramelized, and the sausage is heated through.

                Garnish and Serve: Remove from the oven, sprinkle with fresh chopped parsley, and serve hot.
