1 cup corn (fresh, frozen, or canned)

1 cup black beans (drained and rinsed)

1 bell pepper (red, yellow, or green, diced)

1 small red onion (diced)

1 cup cherry tomatoes (halved)

1 avocado (diced, for topping after baking)

1 cup shredded cheddar cheese (or your cheese of choice)

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) if you are cooking the packets in the oven. If grilling, preheat your grill over medium heat.

    Prepare the Chicken: Place the boneless chicken breasts in a mixing bowl. Drizzle olive oil over the chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly with the spices.

      Assemble the Foil Packets: Cut four sheets of aluminum foil, each roughly 12x12 inches. In the center of each foil sheet, place an equal portion of the seasoned chicken. Surround the chicken with the corn, black beans, diced bell pepper, red onion, and cherry tomatoes.
