1 cup granulated sugar

1 cup packed brown sugar

1 teaspoon vanilla extract

3 large eggs

2 cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

For the Filling:

1 cup packed brown sugar

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup cream cheese, softened

1 teaspoon sea salt

1 cup salted caramel sauce (store-bought or homemade)

For the Topping:

Additional sea salt flakes for garnish

Optional: whipped cream for serving

Instructions

Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper for easy removal.

Make the Crust: In a medium bowl, combine melted butter, granulated sugar, brown sugar, and vanilla extract. Mix until smooth. Add in the eggs one at a time, whisking well after each addition. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour the crust mixture into the bottom of the prepared pan and spread it evenly with a spatula.

Prepare the Filling: In a large bowl, mix together the softened cream cheese, granulated sugar, brown sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Mix in the salted caramel sauce until fully blended. Finally, sprinkle in the sea salt and give it a gentle mix.

Combine Layers: Pour the filling over the crust in the baking pan. Use a spatula to evenly distribute it, and don't worry if it doesn't fill the pan completely – it will puff up as it bakes.

Bake the Bars: Bake in the preheated oven for 30-35 minutes or until the edges are set but the center is still slightly gooey. A toothpick inserted into the center should come out with moist crumbs (not wet batter).

Cool and Garnish: Remove the bars from the oven and let them cool in the pan on a wire rack for at least an hour. Once cool, sprinkle the top with sea salt flakes for that extra touch.

Serve: Cut into squares or rectangles and serve with a dollop of whipped cream if desired. Enjoy your salted caramel gooey butter bars with a hot cup of coffee or tea!
