Ingredients

2 1/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup unsalted butter, softened

1 cup packed light brown sugar

3/4 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

Flaky sea salt, for sprinkling

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining two baking sheets with parchment paper.

Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt until well combined. Set aside.

Cream the Butters and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Then, beat in the vanilla extract until fully incorporated.

Combine Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in Butterscotch Chips: Using a spatula, gently fold in the butterscotch chips and chopped pecans (if using) until evenly distributed throughout the dough.

Scoop the Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Sprinkle with Sea Salt: Before baking, lightly sprinkle a pinch of flaky sea salt on top of each cookie to enhance the flavor.

Bake: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden but the centers still look soft.

Cool Down: Once baked, remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve warm or store in an airtight container. These salted butterscotch cookies can be enjoyed for up to a week, although they’ll likely be gone long before then!
