Salmon Skewers with Lime Salsa

For the Salmon Skewers:

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 lemon, juiced

Bamboo skewers (soaked in water for 30 minutes)

For the Lime Salsa:

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 jalapeño, seeded and finely chopped

1/4 cup fresh cilantro, chopped

Zest and juice of 2 limes

Salt, to taste

Marinate the Salmon: In a medium bowl, mix together the olive oil, honey, minced garlic, smoked paprika, oregano, salt, pepper, and lemon juice. Add the salmon cubes to the bowl and gently toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Skewers: Preheat your grill to medium-high heat. Once the salmon is marinated, thread the salmon cubes onto the soaked bamboo skewers, leaving a little space between each piece.

      Make the Lime Salsa: In a large bowl, combine the diced avocado, cherry tomatoes, red onion, jalapeño, cilantro, lime zest, lime juice, and salt. Gently toss the salsa to combine and taste for seasoning adjustments. Set aside.

        Grill the Skewers: Place the salmon skewers on the preheated grill. Cook for about 2-3 minutes on each side, or until the salmon is just cooked through and has nice grill marks. Be careful not to overcook; salmon should be flaky and tender.
