Rosemary Shortbread Cookies

1 cup unsalted butter, softened

2/3 cup powdered sugar

1 tablespoon fresh rosemary, finely chopped

Zest of 1 lemon

2 cups all-purpose flour

1/4 teaspoon sea salt

1/4 teaspoon vanilla extract

Extra sugar for sprinkling on top

Prep the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.

      Add Flavorings: Mix in the finely chopped rosemary, lemon zest, and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and sea salt.

          Mix Together: Gradually add the flour mixture to the butter mixture, stirring until just combined. Be careful not to overmix; the dough should come together but remain tender.

            Shape the Dough: Turn the dough out onto a lightly floured surface. Form it into a disk about 1/2 inch thick, then wrap it in plastic wrap and refrigerate for at least 30 minutes.

              Cut the Cookies: Once chilled, roll out the dough to about 1/4 inch thickness. Use a cookie cutter to cut out shapes, or simply slice into squares with a sharp knife.

                Prepare for Baking: Place the cookies on the prepared baking sheet, spaced about 1 inch apart. Sprinkle the tops lightly with extra sugar.
