Roasted Sweet Potato Tacos

2 medium sweet potatoes, peeled and cubed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

8 small corn tortillas

1 cup black beans, drained and rinsed

1 avocado, sliced

½ cup crumbled feta cheese or cotija cheese

½ cup fresh cilantro, chopped

Juice of 1 lime

Optional: Sliced jalapeños for heat

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large mixing bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper until well coated.

      Roast the Sweet Potatoes: Spread the sweet potatoes evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, turning halfway through, until they're tender and caramelized.

        Warm the Tortillas: While the sweet potatoes are roasting, warm the corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side until they are pliable, or wrap them in a damp cloth and microwave for about 20-30 seconds.

          Prepare the Toppings: In a small bowl, combine the rinsed black beans and lime juice. Set aside. Prepare the avocado and crumbled cheese.

            Assemble the Tacos: Once the sweet potatoes are roasted, it's time to assemble! On each warm tortilla, add a generous scoop of roasted sweet potatoes, followed by a spoonful of lime-infused black beans, avocado slices, and crumbled cheese. Top with fresh cilantro and optional sliced jalapeños for a kick.
