1 cup canned chickpeas, drained and rinsed

1 large roasted red pepper (store-bought or homemade)

2 tablespoons tahini

2 tablespoons extra-virgin olive oil, plus more for drizzling

1 clove garlic, minced

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

¼ teaspoon smoked paprika

Salt and black pepper, to taste

Water (as needed for consistency)

Fresh parsley for garnish (optional)

Pita bread, crackers, or veggies for serving

Prepare the Roasted Red Pepper: If using a store-bought roasted red pepper, simply drain it. For homemade, char your red pepper over an open flame or in a broiler until the skin is blistered. Place it in a covered bowl for 10 minutes to steam, then peel off the skin and remove the seeds.

    Blend the Base: In a food processor, combine the chickpeas, roasted red pepper, tahini, olive oil, minced garlic, lemon juice, ground cumin, smoked paprika, and a pinch of salt.

      Puree to Perfection: Blend on high until the mixture is smooth. If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency (usually around 2-4 tablespoons).
