4 large russet potatoes

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray (for greasing)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and peel the potatoes. Using a sharp knife or a mandoline slicer, cut the potatoes into thin, even slices (about 1/8 inch thick).

      Make Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, rosemary, salt, and pepper. Mix well.

        Layer the Potato Slices: Grease a muffin tin with olive oil spray. Start stacking the potato slices in each muffin cup, brushing a thin layer of the garlic butter mixture between each layer. Aim for about 5-7 slices in each cup, alternating directions to create a stack.

          Add Parmesan: Once you've filled the muffin cups, sprinkle the grated Parmesan cheese evenly over the top of each stack.

            Bake: Place the muffin tin in the preheated oven and bake for about 35-40 minutes, or until the potato stacks are golden brown and crispy on the edges.

              Cool and Serve: Remove the tin from the oven and let the stacks cool for about 5 minutes before carefully removing them using a fork or small knife. Garnish with chopped fresh parsley.
