Roasted Garlic and Herb Chicken Thighs

Ingredients
  

6 bone-in, skin-on chicken thighs

10 cloves of garlic, smashed and peeled

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon paprika

Salt and pepper to taste

Optional: lemon wedges and fresh herbs for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, rosemary, thyme, parsley, paprika, salt, and pepper until combined.

      Add Chicken Thighs: Place the chicken thighs in the marinade, tossing well to coat all sides. Let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for more flavor.

        Arrange in Baking Dish: In a large baking dish or roasting pan, arrange the marinated chicken thighs skin-side up. Scatter the smashed garlic cloves around the chicken.

          Roast the Chicken: Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is beautifully golden and crispy.
