12 fresh figs, halved

1 tablespoon honey

1 tablespoon olive oil

Salt & pepper to taste

1 baguette, sliced into thin rounds

8 oz creamy goat cheese

¼ cup balsamic glaze

Fresh thyme leaves for garnish

Optional: crushed pistachios for added crunch

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Figs: In a bowl, toss the halved figs with honey, olive oil, salt, and pepper. Make sure they are well coated.

      Roast the Figs: Place the figs cut side up on a parchment-lined baking sheet. Roast in the preheated oven for about 15-20 minutes or until the figs are caramelized and tender.

        Prepare the Baguette: While the figs are roasting, arrange the sliced baguette rounds on another baking sheet. Drizzle lightly with olive oil and season with a pinch of salt. Toast in the oven for 5-7 minutes, or until golden and crisp.

          Assemble the Crostini: Remove the toasted baguette slices and the roasted figs from the oven. On each slice of baguette, spread a generous layer of creamy goat cheese.

            Top with Figs: Place a roasted fig half on top of the goat cheese.

              Drizzle and Garnish: Drizzle the balsamic glaze over the crostini and sprinkle with fresh thyme leaves. For added texture, you can also sprinkle crushed pistachios on top.

                Serve Immediately: These crostini are best enjoyed fresh, so serve them right away while the bread is still warm!
