Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 tbsp vanilla extract

4 large eggs

1/4 cup sour cream

1/4 cup heavy cream

Zest of 1 lemon (optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Make the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form a sturdy crust. Bake for about 10 minutes until golden, then remove and let cool.

Prepare the Filling: In a large mixing bowl, using an electric mixer, beat the softened cream cheese on medium speed until smooth and creamy, about 2-3 minutes. Gradually add in 1 cup of granulated sugar, beating until well combined. Mix in the vanilla extract.

Incorporate the Eggs: Add the eggs, one at a time, mixing on low speed just until combined after each addition. Avoid overmixing to keep the cheesecake dense and rich.

Add the Cream and Sour Cream: Gently fold in the sour cream, heavy cream, and lemon zest (if using) until everything is well mixed.

Pour the Filling: Pour the cheesecake batter into the cooled crust, smoothing the top with a spatula.

Bake the Cheesecake: Place the springform pan on a baking sheet and bake in the preheated oven for about 55-70 minutes. The center should be set but still slightly jiggly.

Cooling Process: Once baked, turn off the oven and crack the door, allowing the cheesecake to cool in the oven for an hour. This helps prevent cracking.

Chill: After an hour, remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for the best texture.

Serve: Carefully run a knife around the edge of the cheesecake before releasing the springform pan. Slice and serve chilled with your favorite toppings like fresh fruits, whipped cream, or chocolate sauce.
