To truly appreciate the Reuben Bake Extravaganza, it's essential to understand its roots. The classic Reuben sandwich has a storied history, often attributed to Jewish delis in New York City. It usually features corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, all nestled between two slices of rye bread. The combination of these ingredients creates a unique taste experience: the saltiness of the corned beef balances the tang of the sauerkraut, while the Swiss cheese adds creaminess, and the Thousand Island dressing provides a sweet and tangy dressing that ties everything together.

Ingredients

1 loaf of rye bread, cut into 1-inch cubes

1 pound corned beef, sliced or shredded

1 cup sauerkraut, drained and rinsed

1 cup Swiss cheese, shredded

1 cup Thousand Island dressing

4 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a bit of butter or non-stick spray.

Layer the base: In the prepared baking dish, spread half of the rye bread cubes evenly across the bottom. This will be the foundation of your bake.

Add the corned beef: Layer the sliced or shredded corned beef over the rye bread cubes, ensuring it's spread evenly for maximum flavor in every bite.

Include the sauerkraut: Evenly distribute the drained and rinsed sauerkraut on top of the corned beef layer.

Cheese it up: Sprinkle half of the shredded Swiss cheese over the sauerkraut.

Repeat layers: Add the remaining rye bread cubes on top, followed by the rest of the corned beef, sauerkraut, and finish with the remaining Swiss cheese.

Mix the dressing: In a bowl, whisk together the Thousand Island dressing, eggs, milk, garlic powder, onion powder, and black pepper until well combined.

Pour the mixture: Slowly pour the egg and dressing mixture evenly over the layered ingredients in the baking dish, pressing down slightly with a spatula to ensure everything is soaked evenly.

Bake it: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Let it set: Once baked, remove the Reuben Bake from the oven and let it cool for about 10 minutes. This will help it set before serving.

Garnish and serve: Sprinkle chopped fresh parsley on top for a touch of color. Cut into squares and serve warm.
