Red Velvet Cupcake Cookies

1 ½ cups all-purpose flour

1 tsp unsweetened cocoa powder

½ tsp baking soda

½ tsp baking powder

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tbsp red food coloring

1 tsp vanilla extract

½ cup buttermilk

½ cup cream cheese, softened

1 ½ cups powdered sugar

½ tsp vanilla extract (for frosting)

Optional: sprinkles for decoration

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

        Add Egg and Coloring: Add the egg, red food coloring, and vanilla extract to the butter mixture. Beat until fully combined.

          Incorporate Buttermilk: On low speed, alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined. Be careful not to overmix.

            Scoop Dough: Using a cookie scoop or tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set. The centers may look slightly underbaked but will firm up as they cool. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

                Prepare Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fluffy.

                  Frost the Cookies: Once the cookies have cooled, using a piping bag or knife, frost the top of each cookie generously with the cream cheese frosting.

                    Decorate: If desired, top with sprinkles for an extra festive touch!
