1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup fresh raspberries, gently mashed (plus more for garnish)

½ teaspoon almond extract

¼ cup powdered sugar (for dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing on low speed just until combined.

          Fold in Raspberries: Gently fold in the mashed raspberries, being careful not to overmix to preserve some of the raspberry chunks.

            Scoop Cookies: Use a tablespoon or a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.

                Cool and Dust: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Once completely cooled, dust with powdered sugar and garnish with additional whole raspberries if desired.
