Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup fresh raspberries, smashed (plus extra for garnish)

1/4 cup powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream the Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing with a spatula or wooden spoon until just combined. Avoid overmixing.

Incorporate Raspberries: Gently fold in the smashed raspberries, being careful not to break them down too much. The batter should have a nice rosy hue with berry bits throughout.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded scoops of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.

Cool the Cookies: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Dust with Powdered Sugar: Once the cookies have cooled, lightly dust them with powdered sugar and garnish with whole raspberries for an added touch of elegance.
