4 large egg whites (room temperature)

1 cup granulated sugar

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

1/2 teaspoon almond extract

Food coloring (preferably gel in pink, blue, and yellow)

1 cup powdered sugar (for dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper. You can also draw circles on the parchment that will guide your meringue dollops.

    Whip Egg Whites: In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat on medium speed until soft peaks form.

      Add Sugar Gradually: Gradually add the granulated sugar, about a tablespoon at a time, while continuing to beat the mixture on high speed. Keep mixing until the meringue is glossy and stiff peaks form, about 8-10 minutes.

        Incorporate Flavors: Gently fold in the vanilla extract and almond extract using a spatula, ensuring the mixture remains fluffy and airy.

          Color the Meringue: Divide the meringue into three bowls. Add one color to each bowl (pink, blue, and yellow) and gently fold in the coloring. Aim for a marbled effect rather than fully mixing.

            Piping the Meringues: Fit a piping bag with a star-shaped tip and carefully fill it with the first colored meringue. Start piping in a circular motion to create little swirls on the prepared baking sheets. Continue this with the different colors, alternating as you go for a rainbow effect.

              Bake: Place the meringues in the preheated oven and bake for 1.5 hours. The meringues should look dry and easily lift off the parchment without sticking. Turn off the oven and allow them to cool in the oven for an additional hour.
