1 lb boneless, skinless chicken breast, sliced into thin strips

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra flavor)

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece of ginger, grated

3 green onions, chopped (white and green parts separated)

2 tablespoons sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken, soy sauce, oyster sauce (if using), and cornstarch. Mix well and let it marinate for about 10 minutes while you prepare the vegetables.

    Prep the Vegetables: Rinse and slice the bell peppers and snap peas. Mince the garlic and grate the ginger. Chop the green onions, keeping the white parts separate from the green parts.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until it shimmers.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Cook for 4-5 minutes, without stirring, to allow it to brown. Once browned, stir-fry for an additional 2-3 minutes until fully cooked. Remove the chicken from the pan and set aside.

          Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the white parts of the green onions, garlic, and ginger. Stir-fry for about 30 seconds until fragrant. Then, add the bell peppers and snap peas and stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the cooked chicken to the pan. Drizzle with sesame oil and toss everything to combine. Cook for an additional 1-2 minutes, ensuring everything is heated through. Season with salt and pepper to taste.

              Serve: Serve the chicken stir-fry over cooked rice or noodles. Garnish with the green parts of the chopped green onions.
