8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 cups fresh spinach, washed and dried

4 cloves garlic, minced

1/4 cup chicken or vegetable broth

1/4 cup olive oil

Juice of 1 lemon

Zest of 1 lemon

1/2 teaspoon red pepper flakes (adjust for spice)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once warmed, add the minced garlic and sauté for about 30 seconds until fragrant (be careful not to burn it). Add the shrimp and sprinkle with salt, pepper, and red pepper flakes. Cook the shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Combine Ingredients: In the same skillet, add the chicken or vegetable broth, lemon juice, and lemon zest. Stir to combine and let it simmer for about 2 minutes to reduce slightly.

        Add Spinach & Pasta: Add the fresh spinach to the skillet and stir until it wilts. Next, return the cooked shrimp to the skillet along with the drained pasta. Toss all ingredients together, adding reserved pasta water if needed to create a light sauce.

          Season & Serve: Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired. Remove from heat, and serve immediately. Sprinkle fresh parsley and grated Parmesan cheese on top as a garnish.
