Quick Chicken Stir-Fry

2 boneless, skinless chicken breasts, sliced thinly

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 carrot, julienned

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

Juice and zest of 1 lime

1 tablespoon sesame seeds (optional for garnish)

Cooked rice or noodles, for serving

Instructions
 

In a medium bowl, combine the sliced chicken breasts with soy sauce, oyster sauce, and cornstarch. Mix until the chicken is evenly coated and set aside to marinate for about 15 minutes.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook for about 4-5 minutes, stirring frequently, until the chicken is cooked through and has a golden-brown color. Remove the chicken from the skillet and set aside.

      In the same skillet, add the garlic and ginger, and sauté for about 30 seconds until fragrant.

        Add the sliced bell pepper, broccoli florets, and julienned carrot to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are crisp-tender.

          Return the chicken to the skillet and pour in the lime juice and zest. Toss well to combine all the ingredients. Cook for another 1-2 minutes to heat through.

            Serve the stir-fry over cooked rice or noodles, and garnish with chopped green onions and sesame seeds if desired. Enjoy your zesty creation!
