1 lb beef (sirloin or chuck), cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons vindaloo spice mix (store-bought or homemade)

1 cup tomato puree

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

1-2 green chilies, slit lengthwise (adjust for heat)

Salt to taste

Fresh cilantro for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the beef cubes with 1 tablespoon of vindaloo spice mix, salt, and a little vinegar. Let it marinate while you prep the other ingredients (ideally for at least 20 minutes).

    Sauté Onions: In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent and golden, about 5-7 minutes.

      Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

        Spice It Up: Add the remaining vindaloo spice mix and the slit green chilies. Fry for about a minute, ensuring the spices are well incorporated and fragrant.

          Brown the Beef: Increase the heat to medium-high and add the marinated beef cubes. Sear the meat on all sides until browned, about 5-8 minutes.

            Tomato Base: Stir in the tomato puree and bring to a simmer. Let it cook for about 5 minutes, allowing the flavors to meld.

              Sweet & Sour Balance: Add the apple cider vinegar and brown sugar, stirring well to combine. Adjust the salt to taste, and let it simmer for another 5-10 minutes or until the beef is tender.

                Serve: Once the beef is cooked to your liking, remove from heat. Garnish with fresh cilantro and serve hot with steamed rice or naan.
