Ingredients

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water or plant-based milk (for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Bang Bang Sauce:

½ cup mayonnaise (or vegan mayo)

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon lime juice

1 teaspoon honey or agave nectar (for vegan option)

Instructions

Prepare the Cauliflower: In a large bowl, combine the flour, water or plant-based milk, garlic powder, onion powder, salt, and black pepper to create a batter. Whisk until smooth.

Bread the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Then, coat in panko breadcrumbs, ensuring they’re evenly covered.

Heat the Oil: In a large skillet or frying pan, heat about ½ inch of vegetable oil over medium-high heat until shimmering. To check if it's hot enough, drop a small piece of batter into the oil; it should bubble immediately.

Fry the Cauliflower: Carefully place the coated cauliflower florets in the hot oil, cooking in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until they’re golden brown and crispy.

Drain and Cool: Once fried, transfer the cauliflower to a plate lined with paper towels to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and honey or agave. Mix until smooth and creamy.

Toss and Serve: Place the crispy cauliflower in a bowl, drizzle with the Bang Bang sauce, and toss to coat them evenly. Serve immediately, garnished with chopped green onions or sesame seeds, if desired.
