Quick and Easy Creamy Beef Noodle Casserole

8 oz egg noodles

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 tsp dried Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to the package directions. Drain and set aside.

    Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink. Season with salt, pepper, and Italian seasoning.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, drained noodles, frozen mixed vegetables, cream of mushroom soup, and sour cream. Stir until everything is well integrated. Fold in the shredded cheddar cheese.

        Transfer to Casserole Dish: Preheat your oven to 350°F (175°C). Pour the beef and noodle mixture into a greased 9x13-inch casserole dish, spreading it evenly.

          Top and Bake: Sprinkle additional shredded cheddar cheese on top. Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
