Ingredients

1 cup all-purpose flour

2 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon pumpkin pie spice (or mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon salt

1 cup milk (preferably whole or buttermilk)

1/2 cup pure pumpkin puree (canned or homemade)

1 large egg

2 tablespoons melted butter (plus extra for greasing the pan)

1 teaspoon vanilla extract

Instructions

Prepare the Batter:

    - In a large mixing bowl, sift together the flour, brown sugar, baking powder, pumpkin pie spice, and salt until well combined.

      Mix Wet Ingredients:

        - In a separate bowl, whisk together the milk, pumpkin puree, egg, melted butter, and vanilla extract until smooth and fully incorporated.

          Combine Mixtures:

            - Slowly pour the wet ingredients into the dry ingredients. Gently stir with a spatula or whisk until just combined. Be careful not to overmix; it's okay if there are a few lumps.

              Heat the Pan:

                - Preheat a non-stick skillet or griddle over medium heat. Lightly grease the pan with a pat of butter.

                  Cook the Pancakes:

                    - Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, approximately 2-3 minutes. Flip the pancakes and cook for an additional 2 minutes, or until golden brown.

                      Serve:

                        - Remove the pancakes from the skillet and keep warm in a low oven while you finish cooking the remaining batter. Serve warm with maple syrup, whipped cream, or additional spices as desired.
