1 cup all-purpose flour

1 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp pumpkin pie spice

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup brewed coffee, cooled

1/3 cup vegetable oil or melted coconut oil

1 tsp vanilla extract

1/2 cup milk (dairy or non-dairy)

1/2 cup chocolate chips or chopped nuts (optional, for added texture)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and pumpkin pie spice until well combined.

      Mix Sugars & Wet Ingredients: In another bowl, combine the brown sugar, granulated sugar, and eggs. Beat them together until the mixture is light and fluffy. Then, add the pumpkin puree, cooled brewed coffee, oil, vanilla extract, and milk. Mix until smooth.

        Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients, mixing gently to avoid over-mixing. If you are using chocolate chips or nuts, add them in at this stage and fold just until evenly distributed.

          Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This will allow the muffins to rise properly without overflowing.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool Down: Once baked, allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                Optional Glaze: If desired, drizzle a simple icing made of powdered sugar and milk over the cooled muffins for an added sweet touch.
