Ingredients

2 cups rolled oats

1 cup canned pumpkin puree

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 tsp pumpkin pie spice (or mix of cinnamon, nutmeg, and ginger)

1/2 tsp salt

1/2 cup chopped walnuts (optional)

1/4 cup dried cranberries or raisins (optional)

1/4 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin pie spice, and salt. Stir until evenly mixed.

Mix Wet Ingredients: In another bowl, whisk together the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients and stir until everything is fully combined. If desired, fold in walnuts, cranberries, or chocolate chips for added texture and flavor.

Shape Bites: Using your hands, take a tablespoon-sized amount of the mixture and roll it into a ball. Place each ball on the prepared baking sheet, flattening them slightly to form bite-sized discs.

Bake: Bake in the preheated oven for about 15-20 minutes, or until the edges are golden. The bites will firm up as they cool.

Cool: Allow the bites to cool on a wire rack for 10 minutes before transferring to an airtight container.

Serve: Enjoy these delicious pumpkin pie oatmeal bites as a quick snack or a healthy breakfast on the go!
