2 cups all-purpose flour

1 cup pure pumpkin puree (canned or fresh)

1/2 cup brown sugar, packed

1/2 cup milk

3 large eggs

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Streusel Topping:

1/2 cup all-purpose flour

1/2 cup old-fashioned oats

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

1/4 cup chopped pecans or walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish or line it with parchment paper.

    Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin puree and mix well. Then, add the eggs one at a time, mixing until fully incorporated, followed by the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

        Mix Everything Together: Gradually add the dry ingredients to the pumpkin mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.

          Prepare the Streusel Topping: In a medium bowl, combine the flour, oats, brown sugar, and cinnamon. Pour in the melted butter and mix until crumbly. Stir in the chopped nuts if using.
