Ingredients
  

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium carrots, diced

2 cans (15 oz each) canned pumpkin puree

2 cans (15 oz each) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juice

2 cups vegetable broth

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon cinnamon

Salt and pepper, to taste

2 tablespoons olive oil

Optional toppings: Greek yogurt or sour cream, cilantro, jalapeños, shredded cheese

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, garlic, red and green bell peppers, and carrots. Sauté until the vegetables are softened, about 5-7 minutes.

    Add the Spices: Stir in the chili powder, cumin, smoked paprika, and cinnamon. Cook for an additional 2 minutes, stirring frequently to ensure the spices become fragrant.

      Combine the Base Ingredients: Add the pumpkin puree, black beans, kidney beans, diced tomatoes (with their juice), and vegetable broth to the pot. Stir to combine all the ingredients well.

        Simmer the Chili: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let simmer for about 30 minutes, stirring occasionally, allowing the flavors to meld together.

          Adjust Seasoning: After simmering, taste the chili and season with salt and pepper as needed. If a spicier flavor is desired, feel free to add extra chili powder or a dash of cayenne pepper.

            Serve: Ladle the pumpkin chili into bowls and garnish with your choice of toppings such as Greek yogurt, cilantro, jalapeños, or shredded cheese.
