2 cups canned pumpkin puree

1 cup cream cheese, softened

1 cup heavy cream

2/3 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1/2 cup crushed graham crackers (for crust)

1/4 cup caramel sauce (for drizzling, optional)

Instructions
 

In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat with a hand mixer or stand mixer until smooth and creamy.

    Add the pumpkin puree, heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and cloves to the bowl. Mix until all ingredients are well incorporated and the mixture is smooth and velvety.

      Gently fold in the crushed graham crackers to give the cheesecake base a crunchy texture. If you prefer a smoother texture, reserve some for topping later.

        Pour the pumpkin cheesecake mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
