Ingredients

1 ½ cups unsalted butter, softened

8 oz cream cheese, softened

3 cups granulated sugar

6 large eggs

1 tbsp vanilla extract

1 tsp lemon extract (optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease and flour a 10-inch bundt pan or tube pan to prevent sticking.

Cream the Butter and Cheese: In a large mixing bowl, combine the softened unsalted butter and cream cheese. Using an electric mixer, beat on medium speed until the mixture is smooth, fluffy, and well-combined, about 4-5 minutes.

Add Sugar: Gradually add the granulated sugar to the butter and cream cheese mixture. Continue beating on medium speed until light and fluffy, about another 3-4 minutes.

Incorporate Eggs: Add the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Scrape down the sides of the bowl as needed to ensure even mixing.

Add Extracts: Once the eggs are well combined, add the vanilla extract and lemon extract (if using). Mix just until everything is combined, taking care not to overmix.

Prepare the Flour Mixture: In a separate bowl, sift together any dry ingredients you wish to add (for example, 3 cups of flour and 1 tsp of salt, if desired). Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

Pour and Smooth: Pour the batter into the prepared bundt or tube pan. Smooth the top with a spatula for an even surface.

Bake: Bake in the preheated oven for 70-80 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the cake toward the end; the baking time may vary slightly depending on your oven.

Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes. Then, carefully invert the cake onto a wire rack to cool completely.

Optional Glaze: For an extra touch, you can mix powdered sugar with a bit of milk and vanilla to create a simple glaze to drizzle over the cooled pound cake.
