1 pound large shrimp, peeled and deveined

1 cup fresh pineapple, diced

2 tablespoons soy sauce

1 tablespoon teriyaki sauce

2 teaspoons sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 bell pepper (red or yellow), sliced

1 cup snap peas, trimmed

3 green onions, chopped (divided)

1 tablespoon sesame seeds

Salt and pepper to taste

Cooked jasmine rice or quinoa, for serving

Instructions
 

Marinate Shrimp: In a bowl, combine the shrimp with soy sauce, teriyaki sauce, and sesame oil. Mix well and let the shrimp marinate for about 15 minutes.

    Prep the Stir Fry: While the shrimp is marinating, prepare your vegetables. Dice the pineapple, slice the bell pepper, and trim the snap peas. Set aside.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Sauté Aromatics: Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant.

          Cook the Shrimp: Add the marinated shrimp to the skillet. Cook for 2-3 minutes on each side, or until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.

            Stir-Fry Vegetables: In the same skillet, add the sliced bell pepper and snap peas. Stir-fry for about 3-4 minutes until they are tender-crisp.

              Combine Ingredients: Return the cooked shrimp to the skillet along with the diced pineapple. Cook for another 2 minutes, stirring gently to combine. Add salt and pepper to taste.

                Garnish and Serve: Remove the stir fry from heat. Sprinkle with chopped green onions and sesame seeds. Serve hot over cooked jasmine rice or quinoa.
