2 cups mixed salad greens (spinach, arugula, and romaine)

1 cup diced fresh pineapple

2 fillets of skinless salmon (about 6 oz each)

1/2 avocado, sliced

1/4 red onion, thinly sliced

1/2 cucumber, diced

1/4 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

1/4 cup walnuts or pecans, toasted

Fresh cilantro for garnish

For the Marinade:

Juice of 1 lime

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon minced garlic

Salt and pepper to taste

For the Dressing:

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

Marinate the Salmon: In a small bowl, whisk together marinade ingredients (lime juice, olive oil, soy sauce, honey, minced garlic, salt, and pepper) until well combined. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let it sit in the refrigerator for at least 30 minutes, allowing the flavors to infuse.

    Cook the Salmon: Preheat your grill or a skillet over medium heat. Remove the salmon from the marinade and grill or pan-sear for about 4-5 minutes on each side, or until cooked through and flaky. Remove from heat and let it cool slightly, then break into large pieces.

      Prepare the Salad Base: In a large bowl, combine the mixed salad greens, diced pineapple, chopped cucumber, cherry tomatoes, red onion, and avocado. Toss gently to combine.

        Make the Dressing: In a small jar or bowl, whisk together the dressing ingredients (olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper) until emulsified.
