2 cups fresh pineapple, chopped

1 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

2 tablespoons butter, cubed

1 pre-made pie crust (store-bought or homemade)

1 egg (for egg wash)

Whipped cream (for serving, optional)

Instructions
 

Prep the Pineapple: If using fresh pineapple, peel, core, and chop the pineapple into small pieces. You should have about 2 cups of chopped pineapple.

    Make the Filling: In a large mixing bowl, combine the chopped pineapple, granulated sugar, cornstarch, salt, lemon juice, vanilla extract, and ground cinnamon. Toss everything together until the pineapple is fully coated. Let it sit for about 10 minutes to allow the juices to release.

      Preheat the Oven: Preheat your oven to 425°F (220°C).

        Prepare the Pie Crust: Roll out the pre-made pie crust (if using homemade, roll it to fit your pie dish) and gently lay it into a 9-inch pie dish. Trim any excess crust hanging over the edges.

          Fill the Pie: Pour the pineapple filling into the prepared pie crust, making sure it’s evenly distributed. Dot the filling with small cubed butter to enhance the richness.

            Top the Pie: If desired, create a lattice top with another rolled-out pie crust or simply place a second crust over the filling. Cut slits in the top crust to allow steam to escape. Crimp the edges to seal the pie.

              Egg Wash: Beat the egg in a small bowl and brush the egg wash over the top crust for a golden finish.

                Bake the Pie: Place the pie in the preheated oven and bake for 15 minutes. Then, reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

                  Cool: Remove the pie from the oven and let it cool on a wire rack for at least 1 hour to allow the filling to set properly.

                    Serve: Slice the pineapple pie and serve it warm or at room temperature, optionally topped with whipped cream.
