1 cup coconut milk

1 cup heavy cream

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 1/2 teaspoons gelatin powder

4 tablespoons cold water

1 cup fresh pineapple, diced

2 tablespoons lime juice

Pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Let it bloom for about 5 minutes until it swells and becomes gelatinous.

    Heat the Mixture: In a saucepan over medium heat, combine the coconut milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt. Stir gently until the sugar is completely dissolved and the mixture is hot but not boiling (about 5 minutes).

      Incorporate Gelatin: Remove the saucepan from heat. Add the bloomed gelatin to the warm mixture, stirring continuously until the gelatin is fully dissolved and incorporated.

        Pour into Molds: Carefully pour the panna cotta mixture into serving glasses or molds. Allow them to cool to room temperature, then refrigerate for at least 4 hours or until set.

          Prepare the Pineapple Topping: While the panna cotta is setting, mix the diced pineapple with lime juice in a bowl. Let it marinate for about 30 minutes to enhance the flavor.
