2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup crushed pineapple (with juice)

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup shredded coconut (optional)

1 cup diced fresh pineapple (for garnish)

1 cup whipped cream (for topping)

¼ cup chopped walnuts (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract until well combined.

          Incorporate Pineapple: Mix in the crushed pineapple (including its juice) until evenly distributed.

            Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. If using, fold in the shredded coconut at this stage.

              Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

                Cool the Cake: Remove from the oven and allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

                  Prepare Topping: Once the cake has cooled, spread whipped cream over the top. Garnish with diced fresh pineapple and sprinkle chopped walnuts, if desired.
