Ingredients

1 package (16 oz) frozen pierogi (cheese or potato fillings)

1 medium onion, diced

2 cups shredded sauerkraut, drained

2 cups shredded sharp cheddar cheese

1 cup sour cream

1 cup chicken broth

2 tablespoons butter

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Sauté the Onions: In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until golden brown and softened, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant.

Prepare the Casserole Layer: In a greased 9x13 inch casserole dish, spread half of the sauerkraut evenly on the bottom. Layer half of the frozen pierogi over the sauerkraut. Pour half of the chicken broth over the pierogi and sprinkle with salt, pepper, and paprika.

Add Cheese and Sour Cream: Spread half of the sour cream over the pierogi, then sprinkle half of the shredded cheddar cheese on top.

Repeat the Layers: Repeat the layering process with the remaining sauerkraut, pierogi, chicken broth, and seasonings. Top with the rest of the sour cream and cheddar cheese.

Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Once the casserole is done baking, let it sit for 5 minutes. Garnish with fresh chives or parsley before serving.
