Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter (plus more for the pan)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: maple syrup, whipped cream, fresh berries

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently. Mix just until combined. It’s okay if there are a few lumps; do not overmix. Gently fold in the chocolate chips.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly brush the surface with melted butter.

Cook Pancakes: For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.

Flip and Finish: Carefully flip the pancake and cook for another 2-3 minutes until golden brown and cooked through.

Serve: Stack pancakes on a plate and keep warm while you cook the rest. Serve hot with your favorite toppings such as maple syrup, whipped cream, or fresh berries.
