Pepper Steak with Bell Peppers and Onion

1 lb (450g) flank steak, sliced thinly against the grain

2 tablespoons vegetable oil, divided

1 large onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

¼ cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

½ cup beef broth

1 tablespoon sugar

½ teaspoon black pepper

1 teaspoon sesame oil

Cooked rice or noodles, for serving

Optional: chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Steak: In a bowl, combine the sliced flank steak with soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Toss well to coat the steak and marinate for at least 15 minutes.

    Cook the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and bell peppers. Stir-fry for about 5-7 minutes until they are tender-crisp. Add the minced garlic and grated ginger, stirring for an additional 30 seconds until fragrant. Remove the vegetables from the skillet and set them aside.

      Stir-Fry the Steak: In the same skillet, add the remaining tablespoon of vegetable oil. Add the marinated steak in a single layer. Cook for 2-3 minutes without stirring to allow a nice sear. Then, stir-fry for an additional 2 minutes until the steak is browned but still tender.

        Combine and Make the Sauce: Return the cooked vegetables to the skillet with the steak. In a small bowl, mix the beef broth and sesame oil, then pour this mixture over the steak and vegetables. Stir well to combine and cook for another 1-2 minutes, allowing the sauce to thicken slightly.

          Serve: Remove from heat and transfer to a serving platter. Garnish with chopped green onions and sesame seeds if desired. Serve hot over cooked rice or noodles.
