Pepper Steak in a Crock Pot

1.5 lbs flank steak, sliced into thin strips

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 large onion, sliced

2 bell peppers (red and green), sliced

4 cloves garlic, minced

1 teaspoon ginger, minced

1 cup beef broth

2 teaspoons brown sugar

1 teaspoon black pepper

1 teaspoon salt

½ teaspoon red pepper flakes (optional, for heat)

Cooked rice or noodles, for serving

Chopped green onions and sesame seeds, for garnish

Instructions
 

Marinate the Beef: In a medium bowl, combine sliced flank steak with soy sauce, Worcestershire sauce, and cornstarch. Mix well and let it marinate for about 15-30 minutes.

    Sear the Beef: In a large skillet over medium-high heat, add the vegetable oil. Once the oil is hot, add the marinated beef strips in batches to avoid overcrowding. Sear the meat for about 2-3 minutes on each side until browned. Transfer to the crock pot.

      Prepare the Vegetables: In the same skillet, add a bit more oil if necessary, and sauté the sliced onion, bell peppers, garlic, and ginger for about 3-4 minutes, just until they start to soften.

        Combine Ingredients in Crock Pot: Add the sautéed veggies to the crock pot with the seared beef. Pour in the beef broth, brown sugar, black pepper, salt, and red pepper flakes (if using). Give everything a good stir to combine.

          Cook: Cover the crock pot and cook on low for 6-8 hours or on high for 4 hours until the beef is tender and flavors meld together.

            Serve: Once done, taste the pepper steak and adjust seasoning if needed. Serve it over cooked rice or noodles, and garnish with chopped green onions and sesame seeds for extra flavor and crunch!
