Pecan Pie Balls

1 cup pecans, finely chopped

1 cup graham cracker crumbs

1/2 cup powdered sugar

1/2 cup brown sugar, packed

1/2 cup unsweetened cocoa powder

1/4 cup unsalted butter, melted

1/4 cup maple syrup

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

Optional: 1 cup chocolate chips, for coating

Prepare the Pecans: In a medium skillet over medium heat, toast the chopped pecans until golden brown and fragrant, about 5 minutes. Stir frequently to prevent burning. Once toasted, remove from heat and let cool.

    Mix the Dry Ingredients: In a large bowl, combine graham cracker crumbs, powdered sugar, brown sugar, cocoa powder, ground cinnamon, and salt. Mix well until all dry ingredients are evenly incorporated.

      Combine Wet Ingredients: In another bowl, whisk together melted butter, maple syrup, and vanilla extract until combined.

        Combine Everything Together: Gradually pour the wet mixture into the dry ingredients. Fold in the toasted pecans until everything is evenly mixed. The mixture should be somewhat sticky but hold together. If it’s too crumbly, add a little more maple syrup or melted butter as needed.

          Form Balls: Using your hands, scoop out approximately a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is shaped into balls. You should end up with about 20-24 balls.

            Optional Chocolate Coating: If desired, melt the chocolate chips in a microwave-safe bowl in 30-second increments until smooth. Dip each ball into the melted chocolate, letting any excess drip off. Place the coated balls on a parchment-lined tray.

              Chill: Refrigerate the pecan pie balls for at least 30 minutes to firm up. Enjoy chilled for the best texture!
