Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup creamy peanut butter

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

¾ cup buttermilk

½ cup chopped roasted peanuts (optional, for added crunch)

For the Peanut Butter Frosting:

1 cup creamy peanut butter

½ cup unsalted butter, softened

2 cups powdered sugar

¼ cup milk

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, making sure each is fully incorporated. Stir in the vanilla extract.

Alternate Mixing: Gradually add the dry mixture to the creamed mixture, alternating with buttermilk, starting and ending with the dry ingredients. Mix until just combined. If using, fold in the chopped roasted peanuts for crunch.

Pour and Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.

Make the Frosting: In a medium mixing bowl, beat together the peanut butter and softened butter until creamy. Gradually add the powdered sugar, alternating with the milk and vanilla, beating until the frosting is smooth and spreadable. Adjust the consistency with more milk if necessary.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving platter. Spread a generous amount of peanut butter frosting over the top. Place the second layer on top and frost the top and sides of the cake.

Decorate and Serve: For an extra touch, sprinkle additional chopped roasted peanuts on top of the frosting. Slice, serve, and enjoy the creamy, dreamy peanut butter cake!
