1 1/2 cups all-purpose flour

1/4 cup granulated sugar, plus extra for sprinkling

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

6-8 tablespoons ice water

2 large peaches, sliced

1 cup fresh raspberries

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 egg (for egg wash)

Instructions
 

Prepare the pastry dough:

    - In a large mixing bowl, whisk together the flour, 1/4 cup sugar, and salt.

      - Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

        - Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork it.

          - Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the filling:

              - In a separate bowl, combine the sliced peaches, raspberries, lemon juice, cornstarch, and vanilla extract. Toss gently to coat the fruit evenly. Set aside to marinate while the dough chills.

                Roll out the dough:

                  - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                    - On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Aim for a rustic look, so it doesn’t need to be a perfect circle.

                      Assemble the galette:
