4 large, ripe peaches, sliced

1 bag of tortilla chips (about 10 oz)

1 cup shredded Monterey Jack cheese

1 cup crumbled feta cheese

1 cup black beans, rinsed and drained

1/2 cup corn kernels (canned or frozen)

1/4 cup jalapeños, sliced (adjust to preference)

1/4 cup fresh cilantro, chopped

1/4 cup honey or agave syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (optional, for a kick)

Lime wedges, for serving

Sour cream or Greek yogurt, for drizzle (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Peach Topping: In a bowl, mix the sliced peaches with honey or agave syrup, cinnamon, and cayenne pepper if using. Set aside to allow the peaches to macerate and absorb the flavors.

      Layer the Nachos: On a large baking sheet, spread out the tortilla chips in an even layer. Make sure they are touching but not overlapping too much to ensure even melting.

        Add Toppings: Sprinkle the shredded Monterey Jack cheese over the tortilla chips, followed by the black beans, corn, jalapeños, and crumbled feta cheese. Finally, add the marinated peach slices on top.
