Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon sea salt

1 cup dried peaches, finely chopped

1 teaspoon ground cinnamon

For the Topping:

1/2 cup rolled oats

1/4 cup all-purpose flour

2 tablespoons granulated sugar

1/4 teaspoon ground cinnamon

2 tablespoons unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix the Cookie Base: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add this dry mixture to the wet mixture, mixing on low speed until just combined.

Incorporate Dried Peaches: Fold in the finely chopped dried peaches, ensuring they are evenly distributed throughout the dough.

Prepare the Topping: In a small bowl, combine the rolled oats, flour, granulated sugar, and ground cinnamon. Stir in the melted butter until the mixture resembles coarse crumbs.

Scoop the Dough: Using a cookie scoop or two tablespoons, drop rounded balls of cookie dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Add Topping: Gently sprinkle the oat mixture over the top of each cookie dough ball.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are just set.

Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your beautiful peach cobbler cookies warm or at room temperature, perhaps with a scoop of vanilla ice cream for an extra treat!
