Peach Cobbler Cinnamon Rolls

Ingredients
  

For the dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1 teaspoon salt

1 cup whole milk, warmed

1/2 cup unsalted butter, melted

2 large eggs

For the peach filling:

3 medium peaches, peeled and diced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 tablespoon cornstarch (optional, for thickening)

For the cinnamon roll filling:

1/4 cup unsalted butter, softened

1/2 cup brown sugar

1 tablespoon cinnamon

For the icing:

1 cup powdered sugar

2 tablespoons cream cheese, softened

2-3 tablespoons milk

1 teaspoon vanilla extract

Instructions
 

Prepare the Dough: In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Then add melted butter and eggs, mixing until well combined. Gradually add in flour and salt, stirring until a soft dough forms.

    Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm area for about 1 hour or until doubled in size.

      Prepare the Peach Filling: In a medium bowl, combine the diced peaches, brown sugar, cinnamon, vanilla extract, and cornstarch (if using). Gently mix to coat the peaches evenly. Set aside.

        Prepare the Cinnamon Roll Filling: In a small bowl, mix together the softened butter, brown sugar, and cinnamon until well combined and smooth.

          Assemble the Rolls: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 16x24 inches). Spread the cinnamon roll filling evenly over the dough, then layer the peach filling on top.

            Roll & Cut: Starting from the long side, carefully roll the dough into a log. Cut the log into 12 equal pieces. Place the rolls into a greased 9x13 inch baking dish, spacing them evenly.

              Second Rise: Cover the rolls with a kitchen towel and let them rise in a warm place for about 30 minutes until puffed.

                Bake: Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes, or until golden brown.

                  Make the Icing: While the rolls are baking, whisk together the powdered sugar, cream cheese, milk, and vanilla extract until smooth and creamy. Adjust the milk for desired consistency.
