8 ounces of pastrami, thinly sliced

4 slices of rye bread (or your choice)

2 tablespoons of yellow mustard

2 tablespoons of mayonnaise

4 slices of Swiss cheese

1 cup of sauerkraut, drained and rinsed

2 tablespoons of butter, softened

1 teaspoon of smoked paprika (optional)

Pickles for garnish (optional)

Instructions
 

Prepare the Bread: Start by buttering one side of each slice of rye bread evenly. This will help achieve a golden, crispy exterior when grilled.

    Build the Sandwich: On the unbuttered side of two slices of bread, spread one tablespoon of yellow mustard and one tablespoon of mayonnaise. Layer with two slices of Swiss cheese, followed by half of the pastrami, half of the sauerkraut, another slice of cheese, and then top with the remaining pastrami.

      Add More Flavor: If desired, sprinkle smoked paprika over the layers for an extra smoky kick. Finish with the last slice of cheese and the second piece of bread, making sure the buttered side is facing out.

        Grill the Sandwich: Heat a skillet over medium heat. Once hot, place the assembled sandwich in the skillet. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt.

          Flip and Continue Cooking: Carefully flip the sandwich and cook for another 3-4 minutes on the other side until it's crispy and the cheese is fully melted. If you're making multiple sandwiches, you can keep them warm in a low oven while cooking the rest.

            Serve: Once cooked to your desired crispiness, remove the sandwich from the skillet and let it rest for a minute. Slice in half, serve with pickles on the side, and enjoy the smoky, savory, stack of flavors!
