Ingredients

4 (6 oz) salmon fillets, skin removed

2 tablespoons olive oil

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Spice Mixture: In a small bowl, combine Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to ensure an even distribution of spices.

Season the Salmon: Pat the salmon fillets dry with paper towels. In a large bowl, drizzle olive oil over the salmon fillets and rub them to coat evenly. Sprinkle the spice mixture generously over the top and sides of each fillet, making sure they are well coated.

Arrange on Baking Sheet: Place the seasoned salmon fillets on the prepared baking sheet, skin side down. Leave a little space between each fillet for even cooking.

Roast in the Oven: Place the baking sheet in the preheated oven and roast the salmon for about 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Add Lemon Juice: In the last minute of roasting, remove the salmon from the oven and drizzle freshly squeezed lemon juice over the fillets. Return to the oven for an additional minute to infuse the lemon flavor.

Garnish and Serve: Once cooked, remove the salmon from the oven, and let it rest for a minute. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
