Oven Fried Feta Rolls with Chili Honey

8 oz (225g) feta cheese, crumbled

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp chili flakes (adjust to taste)

1/4 cup fresh parsley, chopped

10-12 sheets of phyllo pastry

1/2 cup butter, melted (for brushing)

1/2 cup honey

1-2 tsp red chili flakes (for the honey drizzle)

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare Filling: In a mixing bowl, combine the crumbled feta, chopped spinach, sun-dried tomatoes, garlic powder, dried oregano, chili flakes, parsley, salt, and pepper. Mix until everything is well incorporated.

      Assemble Rolls: Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Place a second sheet on top and brush again with butter. Cut the phyllo stack into 3 equal strips lengthwise.

        Fill and Roll: Place a tablespoon of the feta filling at the bottom of each strip. Fold the sides over the filling and roll it up tightly into a log shape. Repeat with the remaining phyllo and filling until you have used all the ingredients.

          Bake Rolls: Arrange the rolls seam-side down on the prepared baking sheet. Brush the tops with more melted butter. Bake for 15-20 minutes, or until they are golden brown and crispy.

            Prepare Chili Honey: While the rolls are baking, heat honey in a small saucepan over low heat. Stir in the red chili flakes and let simmer for a couple of minutes to infuse the honey with spice. Remove from heat and set aside.

              Serve: Remove the baked rolls from the oven and let them cool slightly. Drizzle the spicy chili honey over the rolls and serve with lemon wedges on the side for an extra zesty kick.
