4 large chicken thighs, bone-in and skin-on

1 cup buttermilk

1 teaspoon hot sauce (optional)

2 cups panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon dried rosemary

½ teaspoon black pepper

1 teaspoon salt

¼ cup finely grated Parmesan cheese

Cooking spray or olive oil for drizzling

Marinate the Chicken: In a large bowl, combine the buttermilk and hot sauce (if using). Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Breading: Preheat your oven to 425°F (220°C). In a shallow dish, mix the panko breadcrumbs, garlic powder, onion powder, smoked paprika, thyme, rosemary, black pepper, salt, and Parmesan cheese until well combined.

      Coat the Chicken: Remove the chicken from the buttermilk, letting any excess drip off. Dredge each thigh in the breadcrumb mixture, pressing firmly to ensure an even coating. Place the breaded chicken on a wire rack set over a baking sheet to allow excess crumbs to fall away.

        Bake the Chicken: Lightly spray the chicken with cooking spray or drizzle with olive oil. This helps achieve a golden-brown finish. Bake in the preheated oven for 35-40 minutes, or until the chicken registers an internal temperature of 165°F (75°C) and is crispy and golden.

          Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for about 5 minutes. This will help the juices redistribute. Serve hot with your favorite dipping sauce and sides.
