Oven Baked Chicken Taquitos

2 cups cooked, shredded chicken (rotisserie or boiled)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup black beans, rinsed and drained

1/4 cup corn (fresh, frozen, or canned)

1/4 cup salsa

1/2 tsp cumin

1/2 tsp chili powder

1/4 tsp garlic powder

Salt and pepper to taste

10-12 small flour or corn tortillas

Cooking spray or olive oil

Fresh cilantro and lime wedges for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, shredded cheese, black beans, corn, salsa, cumin, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

      Warm the Tortillas: To make rolling the tortillas easier, warm them. You can do this in a covered microwave-safe dish for about 30 seconds or in a skillet over medium heat for a few seconds on each side until pliable.

        Fill the Tortillas: Place about 2 tablespoons of the chicken mixture onto the center of each tortilla. Roll the tortilla tightly around the filling, keeping it snug but not overly tight.

          Place on Baking Sheet: Arrange the rolled taquitos seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with a bit of olive oil to help them crisp up in the oven.

            Bake the Taquitos: Bake in the preheated oven for 15-20 minutes or until the taquitos are golden brown and crispy, flipping them halfway through for even cooking.

              Serve: Remove from the oven and let them cool for a couple of minutes. Serve warm with fresh cilantro, lime wedges, and additional salsa or sour cream for dipping.
